Lighting the Pizza Oven Fire

The new wood fired pizza oven imported from Modena, Italy is in place at Mario Mare’s new restaurant at White Beach Hotel. Before we can use it to bake pizzas, we must burn a wood fire in it for ten to twelves hours for four days. We started the fire Friday evening and banked the coals overnight. As expected this morning, the embers were still hot and it was easy to ignite new logs and get the fire burning again. This evening is the end of the second day. We will keep the pizza fire burning for two more days and then it will be time for pizza! What will you want on yours? Mozzarella? Pepperoni? Italian sausage? Olives? We will have it all and then some! Be sure to stop by in June to try one for yourself.

    I recently was lucky enough to try the “Margherita” pizza and can without doubt say, “it simply was one of the very best pizzas I have ever eaten!!”
    The chefs Tony, Ori-chan and Kouji really know how to use the oven and mmmmm if you are coming down to White beach hotel, it would be a sin not to try at least one of the pizzas!!
